Gluten Free and Vegan Cornbread

Need a cornbread for that Thanksgiving dinner table that everyone will love. This is it!

Ingredients
1 cup cornmeal
½ cup barley flour
½ cup oat flour
2 teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon sea salt
2 tablespoons olive oil
6 tablespoons maple syrup
½ tablespoon apple cider vinegar
⅓ cup apple sauce or pear sauce
*Use organic ingredients where possible

In a small bowl, combine the cornmeal, barley flour, oat flour, baking powder, baking soda, and salt. Stir ingredients together with a fork or a whisk.
In a separate bowl, combine olive oil, maple syrup, apple cider vinegar, and apple sauce. Whisk these ingredients together.
Pour the wet mixture of ingredients into the dry ingredient bowl and whisk until combined.
Place batter in a 8 inch cast iron skillet. Let batter sit for 10 minutes.
Preheat oven to 375℉. Bake for about 30 minutes.
