Raw Chocolate Chip Cookie Dough

Who does not like a spoonful of raw cookie dough?! Yes, the ingredients will surprise you as they did me when I first came across this idea. Turns out, beans in a dessert are fantastic and you don’t taste them at all. Even my bean hating friends love this. This is just absolute yumminess.

  • 1½ cups cooked chickpeas, drained, rinsed and skins removed (this is equivalent to a 15oz can of chickpeas)
  • 1¼ cups Medjool dates, pitted
  • 1 teaspoon vanilla
  • 3 tablespoons oat flour
  • ¼ cup favorite nut butter (peanut, almond, pecan, etc.)
  • ⅛ teaspoon sea salt
  • handful of vegan grain sweetened chocolate chips

*Use organic ingredients where possible

Place all ingredients except the chocolate chips in a food processor. Blend well until the consistency of cookie dough is obtained. Scoop the dough out of the food processor and work a handful of chocolate chips into the dough. Place in the refrigerator for 30 minutes and then serve as it is delicious eaten cool. Enjoy!
