Ever get hungry in the afternoon and just want something small and sweet? These fit the bill! My daughter loves them and calls them the “O-Ball”. These store for a long time and are fantastic on hikes or bikes rides for that little extra energy boost.
Super Simple Pecan Snack Balls
1½ cup rolled oats
1 cup pecans
3 tablespoons brown rice syrup
*Use organic ingredients where possible
Place the rolled oats in a blender and pulse until they are a coarse flour consistency. Add the pecans, cinnamon and sea salt and pulse until the pecans break up into small pecan pieces. You do not want a flour consistency. In a bowl, place the brown rice syrup, a pinch of sea salt and then add the dry ingredients to the bowl mixing together with your hands. Once well mixed together, form into packed balls. Store in a jar or enjoy right away!
