This delicious dessert came about on a very unusually hot June day where I wanted something sweet but could not bring myself to turn the stove on. It’s delicious.
Lemon Cashew Cream Pudding
1 cup raw cashews
½ cup water
6 tablespoons fresh lemon juice (2 lemons)
4 tablespoons maple syrup
½ teaspoon vanilla extract
*Use organic ingredients where possible
Place the cashews and water in a blender and blend till smooth. Add lemon juice, maple syrup, vanilla and pinch of sea salt. Blend until cream. Pour into a bowl and top with your favorite choice of berries. Enjoy!
