ARE YOU STRESSED?! Did you just come home from work or dragging the kids from one event to another and all you want to do is sit on the couch but the family has other plans for you. Don’t do anything until you try this sweet calm warming soup. After you finish a bowl, you will feel warm, grounded and so calm you will just smile at whatever life throws at you next.
Lovely Root Vegetable Soup:
1 medium sized onion, large diced
1 large Japanese sweet potato, large diced (can peel if wish)
2 parsnips, large diced
2 carrots, large diced
*Use organic ingredients where possible
Place a soup pot over medium heat. When the bottom of the pot is warm, add the oil followed by the onion. Stir so the onion is coated with oil. Let sauté for 1 minute. Layer the parsnip followed by the carrot and sweet potato. Fill the pot with water such that it just covers the potato (feel free to adjust the amount of water – less will make a thicker soup). Bring to a boil and simmer for 30-45 minutes.
Using a hand blender, partially blend the soup mixture leaving just enough diced vegetables to provide texture.
Add salt to taste. Let simmer 2 more minutes.
Garnish with cilantro, scallions or parsley.
